|Local Organic Tomatoes from Bio-Fruits|
This particular basket was brimming with things that would soon be available in my own garden, but a nice bridge until then. I like to try and incorporate fresh vegetables into as many aspects of the meal as possible. In this box were some snow peas, garlic, spring onions, new potatoes, kale, spinach and more.
The protein is usually secondary to all the lovely produce which must be used much more quickly than non-organic produce (from my experience). The vegetable sides usually dictate which protein we'll be having for dinner that particular evening. I decided to do a nice mashed new potato and mixed in some raw shredded kale and spinach. For extra flavour, I added some shredded basil. Which type of herb or greens you use is up to you. Kale can be a bit troublesome for me at times (does a number on my stomach when eaten raw!), however, finely shredded and mixed into the hot potatoes with some EVOO and it was delicious. The previous day I had made some tomato relish to go with some chicken. I topped the potatoes with some of the leftovers. The snow peas were my usual quick preparation - stringed, washed, sauteed with a touch of grape seed oil, then added some chopped garlic and a little chicken stock - steam for 2-1/2 minutes and they are lovely each time. Bright green, fresh, delicious. I can't wait to see what the next basket has in store. My mind starts whirling the minute I see that blue Rubbermaid container. We are fortunate to live close to such goodness.
