Green Gazpacho

Great and bright flavours - tastes like the farmer's market in a bowl!


  1. 1/2 lb Green Zebra tomatoes, cored and coarsely chopped
  2. 1/2 lb Yellow tomatoes
  3. 1/2 a seedless cucumber, unpeeled and coarsely chopped, plus finely diced unpeeled cucumber for garnish
  4. 1 small sweet onion, coarsely chopped
  5. 1/2 a small seranno pepper, stemmed and seeded
  6. 1small garlic clove
  7. 1 tablespoon freshly squeezed lime juice
  8. 1/4 cup extra-virgin olive oil, plus more for drizzling
  9. Salt and freshly ground pepper
Puree in a blender - pass through a food mill for a finer texture.

Garnished with chopped cucumber and white onion and drops of olive oil
