The Humble Roast Chicken

Gonna keep it short, Ramsay F-Word style...

1 roast chicken - about 2 kg
1 sweet onion, quartered
2 new red potatoes, quartered
1 large carrots, cut into large chunks

Preheat oven to 400F
Wash and pat dry chicken
Rub outside of chicken with 1 tb olive oil
Sprinkle with your favourite seasoning mixture - (I used smoked black pepper & garlic and smoked salt with Herbes de Provence - just plain thyme, salt and pepper work really well also)
Place all ingredients in a roasting pan
Roast for 90 minutes in oven
Pour off juices into a small saucepan
Bring to a boil, thicken with a slurry (1 tb flour mixed with 1 c water)
Add enough slurry to thicken your sauce
Carve chicken
Plate up with veg and pour gravy on top
