I had a hankering (is that even a word?) for some seafood yesterday and headed over to my neighbourhood fishmonger. I didn't have anything particular in mind, just wanted to see what looked good and fresh.
I settled on the fresh tuna steak. The loin looked sooo tempting. I had the guy cut me two 3/4" steaks. Yes, I wanted it that precise! LOL.
A simple preparation is best for me with fresh tuna. I seasoned it with kosher salt and pepper and rubbed with 1 tsp of olive oil per each steak (wouldn't go through all this trouble and expense to have it stick to my grill!).
Grill the tuna steaks to your liking - we like ours medium. On a hot grill (425F), this would be about 2 minutes per side.
I prepared a vinaigrette as follows:
2 tb extra virgin olive oil
1 tb fresh squeezed lime juice
1/2 tsp (about 1/2 a large clove) of garlic, finely chopped, not minced (mincing here would be too much garlic taste)
1 tb fresh thyme, chopped
1 tsp green peppercorns, chopped (I use the ones that are soaked in brine - I soak them in hot water for about 10 minutes - this makes them easier to chop)
Salt and Pepper to taste
Mix all the ingredients together in a small bowl and drizzle over the tuna steaks while still hot and sizzling from your grill.
